Ok - so this reply's a little late...
But for anyone with an 00 to 03 Taurus:
http://www.installer.com/item/display_item.php?it=99-5718
and 04-07' Taurus:
http://www.installer.com/item/display_item.php?it=99-5719
They do make the dash kits for cars equipped with EATC...
The catch is - they're ugly and NOT cheap...

the head unit and a/c controls are all integrated.
So making one was next to impossible on taurus forums, and every search I did never turned one of these up, or I just bypassed it, I found one in canada for $160, but still alot compared to a freaking normal metra kit!

The other option - if you want MP3 capability that badly...
Get the PIE X3:
http://www.logjamelectronics.com/piex3auxconv.html
Can't remember the manufacturer's website address... but you get this neato box that plugs into your changer data cable in series, then it gives you 3 auxiliary inputs (one of which I used to plug in an ipod instead of using those absolute CRAP FM modulators). Also handy if you want to hardwire Sirius, or XM, or whatever else.
Also nice on roadtrips to plug in a portable DVD player since it's not all that loud to start with....
Then to improve the sound, just get an LOC, hook up some amps, and done!

Also - apparently - cause I never took mine out to confirm this, but all the controls (stereo & heat/AC) are all integrated on ONE board... (except for the RCU in the trunk)
